Rosemary-Salted Crispy Roasted Baby Potatoes

This is one of the MANY reasons why potatoes are so loved… probably reason 3842. It’s a perfect addition to any savoury meal but don’t think you can’t make these guys on their own! Extra crispy on the outside and extra soft on the inside. Honestly, it’s worth the wait friends.

Rosemary-Salted Crispy Roasted Baby Potatoes

  • 1kg baby potatoes
  • 4 tbsp olive oil
  • 1 tbsp coarse salt
  • 2 sprigs rosemary, finely chopped (optional)


  1. Firstly, preheat your oven to 220 degrees celsius.
  2. Boil the baby potatoes until AL DENTE (soft but not overcooked).
  3. Drain and place in an oven-proof dish. Cover in olive oil and salt and lightly mash/squeeze. Mix well to ensure everything is covered well and bake in the oven for 45mins at 220 degrees celsius.
  4. Once crispy and golden brown you can sprinkle over some freshly chopped rosemary, optional, but a favorite of mine! Enjoy.roasted baby potatoes extra crispy
