Chocolate lovers brownie

Sooooo we’re talkin brownies…. great! These are incredibly good but you’re only allowed to enjoy them guilt-free because balance people 😀

Check out the video below, this will give you a great idea of how to approach this recipe – also (side note) the brownies in the feature image have had about 12 hours to cool down so they definitely firm up and become super fudgy when given time to recoup.

A Chocolate Lovers Brownie

  • 145g unsalted butter
  • 155g brown sugar
  • 80g unsweetened cacao
  • 1 tsp vanilla extract
  • 2 large eggs
  • 70g flour
  • 1/4 tsp salt
  • 100g dark chocolate


  1. Bring water to a simmer and place a heatproof bowl over (ensure that the base of the bowl doesn’t touch the simmering water).
  2. Add the butter, sugar and cacao to the bowl and melt. NOTE: the sugar doesn’t need to fully melt.
  3. Allow to cool for 5mins. Add the vanilla essence and 1 egg at a time.
  4. Add the flour and salt and mix well.
  5. Add the dark chocolate and mix. Remember that the mixture is slightly warm so the more you mix the more the chocolate will melt so don’t over mix the batter.
  6. Prepare an 8×8 inch baking tin. Line with baking paper and Cook & Stray. Spread evenly.
  7. Bake for 20-25mins at 160 degrees celsius.
