
Ingredients
- 1 tbsp sesame seeds
- 1 cup cherry tomatoes halved
- 1 tbsp olive oil
- Pinch of salt
- 1 tbsp salted butter
- 3 eggs
- Toasted Ciabatta or any bread of your choice
- Freshly grated parmesan
Instructions
- First toast the sesame seeds on medium heat until golden in color.
- Add the olive oil, halved cherry tomatoes, balsamic vinegar and salt. Sauté on medium high heat for 3-5mins or until the sauce starts to thicken. Remove from the heat and set aside.
- Toast your bread while you start with the eggs.
- Add your eggs to a medium bowl and whisk until well combined.
- Heat your non-stick pan to medium heat and add the butter. Allow the butter to melt and add your eggs. Using a spatula, gently stir the eggs around until they start to come together and have cooked 70% of the way.
- Place the eggs on top of your toasted ciabatta, drizzle over the cherry tomatoes and finish off with some grated parmesan.
- Time to devour! 🙂
