Buttery Scrambled Eggs with Balsamic Glazed Cherry Tomatoes

Ingredients

  • 1 tbsp sesame seeds
  • 1 cup cherry tomatoes halved
  • 1 tbsp olive oil
  • Pinch of salt
  • 1 tbsp salted butter
  • 3 eggs
  • Toasted Ciabatta or any bread of your choice
  • Freshly grated parmesan

Instructions

  • First toast the sesame seeds on medium heat until golden in color.
  • Add the olive oil, halved cherry tomatoes, balsamic vinegar and salt. Sauté on medium high heat for 3-5mins or until the sauce starts to thicken. Remove from the heat and set aside.
  • Toast your bread while you start with the eggs.
  • Add your eggs to a medium bowl and whisk until well combined.
  • Heat your non-stick pan to medium heat and add the butter. Allow the butter to melt and add your eggs. Using a spatula, gently stir the eggs around until they start to come together and have cooked 70% of the way.
  • Place the eggs on top of your toasted ciabatta, drizzle over the cherry tomatoes and finish off with some grated parmesan.
  • Time to devour! 🙂
