Buttery Scrambled Eggs with Balsamic Glazed Cherry Tomatoes

  • 1 tbsp sesame seeds
  • 1 cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • Pinch of salt
  • 1 tbsp salted butter
  • 3 eggs
  • Toasted Ciabatta or any bread of your choice
  • Freshly grated parmesan


  1. First toast the sesame seeds on medium heat until golden in color.
  2. Add the olive oil, halved cherry tomatoes, balsamic vinegar and salt. Sauté on medium high heat for 3-5mins or until the sauce starts to thicken. Remove from the heat and set aside.
  3. Toast your bread while you start with the eggs.
  4. Add your eggs to a medium bowl and whisk until well combined.
  5. Heat your non-stick pan to medium heat and add the butter. Allow the butter to melt and add your eggs. Using a spatula, gently stir the eggs around until they start to come together and have cooked 70% of the way.
  6. Place the eggs on top of your toasted ciabatta, drizzle over the cherry tomatoes and finish off with some grated parmesan.
  7. Time to devour! 🙂
