Caramelized Onion and Mushroom Tart

This is dangerously good and so simple to make! The perfect savoury addition to your snack platters, or served as a starter or even with your mains. I love how approachable and versatile this concept is because there are so many wonderful toppings you can add and play around with. Serving this tart straight out of the oven is best but once it reaches room temperature it’s honestly just as good.

Below I’ve listed both the cream cheese and grated cheese in the recipe because you have the option of using either or. My only tip would be to ensure that your toppings aren’t too oily as this will decrease the crispiness of the tart and make it more difficult to manage once it’s done baking.

Ingredients

  • 2 tbsp olive oil
  • 250 g button mushrooms sliced
  • 2 large white onions sliced into thin halved rings
  • 1 puff pastry sheet
  • 150 g cream cheese
  • 1 tbsp sweet chilli sauce *optional
  • 80 g white cheddar cheese grated
  • 1 egg
  • salt to taste
  • Garnish with chopped parsley

Instructions

  • Preheat your oven to 200 degrees celsius
  • In a medium-sized pan, add the olive oil, sliced mushrooms and onions together and saute on medium-high heat for around 15mins or until beautifully soft, brown and caramelized. You want some charr on the mushrooms and onions because that adds great flavour to the end result
  • Place your defrosted puff pastry on a baking tray that has been lined with baking paper.
  • Lightly line a border with a butter knife - this will help the edges to puff up whilst baking
  • Add the sweet chilli to the cream cheese in a small bowl and mix well. Add the sweet chilli sauce is optional
  • Spread the cream cheese on the base of the puff pastry, within the borders. If you opted for grated cheese then spread the grated cheese evenly - you may also add a few dollops of sweet chilli sauce on top of the grated cheese if you wish.
  • Add the onion and mushroom mixture on top of the cheese and sprinkle over a generous amount of salt
  • Bake for 15-20mins or until crispy and golden brown.
