Chicken Dumplings with a Chilli Oil Dip

Dumplings are a MUST HAVE for me. I love making a day out of it and creating a few batches with different fillings and then freezing them. I just take the shortcut and buy the dumpling wrappers at my local Asian supermarket. Then when the mood hits I can just pop a few frozen dumplings in the pan for potstickers, or in a ramen broth or steam them. Do it! You won’t be mad… I promise.

Chicken Dumplings

  • 500g minced chicken
  • 1 1/2 cup carrot, finely grated
  • 1 1/2 cup cabbage, finely diced
  • 2 tbsp garlic, finely diced
  • 1 tbsp ginger, finely diced
  • 2 tsp chilli, finely diced
  • 1 tsp salt
  • 1 tbsp soy sauce
  • 1/2 tbsp toasted sesame oil
  • 1 tbsp fish sauce
  • 1/3 cup spring onion, diced
  • 30 store bought dumplings


  1. Firstly, make sure your dumpling have been fully defrosted if you’re taking them straight out of the freezer.
  2. Add the minced chicken, grated carrot, diced cabbage, garlic, ginger, chilli, spring onion, salt, soy sauce, sesame oil and the fish sauce to a medium bowl and mix by hand until well combined./li>
  3. Place a 1 tbsp size of filling in the middle of the dumpling wrapper and pinch each of the sides together and then fold as desired. Just make sure that there aren’t any air pockets in the dumplings and that they’re properly sealed. Otherwise, the juices will escape the dumpling and that’s the last you want.
  4. In a medium-sized saucepan add 1 tbsp vegetable oil and bring to medium-low heat. Place the dumplings in the pan and allow the base of the dumplings to become crispy, which should take about 2-3minutes. Then you’ll add 1/4 cup water to the pan and cover, allow the dumplings to steam for about 3mins – if there’s any water left then continue cooking until the water has evaporated. And that’s it, you’re done, make that dip and enjoy!

Chilli Oil Dip

  • 1/4 cup soy sauce
  • 1/4 cup white wine vinegar
  • 1 tsp chilli oil, store-bought
  • 1 Dash of sesame oil


  1. Add the ingredients together.
