Chorizo Pasta with Spicy Yoghurt Sauce

This pasta is a combination of beautifully warm, spicy and tangy notes. The warmth comes from the chorizo sausage and spices and the tanginess from the yogurt. Huge fan of this pasta!

Spicy Chorizo Pasta

  • 2 tbsp olive oil
  • 6 garlic cloves, thinly sliced
  • 1 tbsp Thai yellow curry paste
  • 1 large onion, finely diced
  • 28g Knorr chicken stock
  • 1 tbsp cajun spice
  • 1 medium green chili, finely diced
  • chorizo, sliced
  • 3/4 cup double cream yogurt
  • 1 tsp brown sugar
  • 300g spaghetti or pasta of choice
  • Salt to taste
  • Garnish with fresh thyme and parmesan
  • 1/4 tsp salt


  1. Add the olive oil and thinly sliced garlic to a large saucepan. Saute on med-high heat until the garlic is golden brown in color. Remove the garlic from the oil and set it aside.
  2. Add the Thai yellow curry paste, finely diced onion, chicken stock, cajun spice and chili to the oil and cook on med-high for 5mins or until the onion is translucent.
  3. Add the diced chorizo and saute for another 5 mins.
  4. Add the yogurt, brown sugar, and half of the crispy garlic flakes to the saucepan and continue cooking for another 5mins until the yogurt has slightly reduced. Set aside while you prepare your pasta.
  5. Add 300g of pasta to a pot of boiling salted water. Cook the pasta until al dente *very important*.
  6. Once the pasta is ready immediately transfer the pasta to the chorizo sauce and add up to 1 cup of pasta water to the mixture. Mix the pasta well and set aside to rest for up to 10mins –  once or twice before serving. This allows for most of the liquid to be absorbed by the pasta.
  7. Dish up as desired and top with a sprinkle of the crispy garlic flakes, fresh thyme, and, if you have… fresh parmesan of course!
