Dark Chocolate & Cranberry Pressed Cookies

So this is not your usual cookie recipe BUT it is a really good one.If you’re looking for a soft, chewy, and a slightly crispy cookie then this recipe is for you… I’ve uploaded a quick video below to give you a good idea of what you can expect – enjoy you cookie monster you!

These cookies need to press down about 8mins into their baking time – this will create a thinner cookie with crispier edges and leave you with a soft center. YUM!

Dark Chocolate & Cranberry Pressed Cookies

  • 150g unsalted butter
  • 100g light brown sugar
  • 70g dark brown sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 225g flour
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 80g unsweetened dried cranberries
  • 120g dark chocolate


  1. Add the butter and sugar together and mix well until creamed.
  2. Add the vanilla extract and egg and mix. The batter might look like it’s separating but that’s perfect.
  3. Add the flour, baking soda and salt and mix.
  4. Add the cranberries and chocolate pieces and mix well.
  5. Form cookie dough balls – I decided to go for cookies weighing between 50-55 grams. Allow the rolled cookies to harden in the fridge for 1 hour or 30mins in the freezer before baking off. Preheat the oven to 190 degrees celsius.
  6. Bake the cookies for 10mins. PLEASE NOTE: The cookies must bake for 8mins before quickly giving each cookie a light press with a large spoon to flatten them and return the batch back to the oven for the remaining 2-4mins.
  7. Allow cooling slightly before devouring! Also, these pressed cookies are PERFECT for ice cream sandwiches.
