Magic Impossible Custard Pie ✨💛 I’d rate this one a 7.5/10 but 9/10 when served with a scoop of vanilla ice cream and (leftover) berry compote. I didn’t have a round glass as pie dish available so used a 16cm W x 26cm L x 5cm D glass dish instead.

Magic Impossible Custard Pie

  • Servings: 9 Squares

Ingredients

  • 1 cup/240g sugar
  • 1 cup/80g desiccated coconut
  • 1/2 cup/65g plain flour
  • 1/2 cup/112g melted butter
  • 4 eggs
  • 2 cups/480ml milk
  • Zest of 1 lemon

Directions

  1. Combine all the ingredients in a large bowl. Give it a good whisk until smooth and well-combined.
  2. Pour the dreamy mixture into a lined pie dish.
  3. Pop it into the oven and bake at 180C for a golden 50 minutes
