It’s that kind of spaghetti bolognese recipe that you’ll never tell your Italian grandparents about but you’ll make it at least once a week at home… it’s easy, tasty and there’ll be plenty of leftovers.

Non-Traditional Spaghetti Bolognese for the Soul

  • 4 tbsp olive oil
  • 3 garlic cloves, finely sliced
  • 1 tbsp fresh thyme
  • 1 large white onion, finely diced
  • 500g ground beef
  • 2 tbsp chicken stock powder
  • 1 tbsp dark brown sugar
  • 1 cup of red wine
  • 700g tomato puree
  • 1 large carrot, finely grated
  • 500g pasta of choice
  • 1 cup of grated parmesan
  • salt and pepper to taste


  1. Add the olive oil, garlic, chilli and thyme to a large saucepan and saute on medium high heat until the garlic turns light brown in color.
  2. Add the finley diced onion and saute for 5mins.
  3. Add the ground beef, chicken stock and brown sugar and saute for 5mins.
  4. Add the wine and cook another 2mins. Add the tomato puree and then refill the tomato puree jar/can with water and add the same equivilant to the saucepan (see below video for reference).
  5. Add the grated carrot and simmer on a medium-low heat until the sauce has reduced by 2/3rds.
  6. Add your pasta of choice to a pot of boiling salted water and cook until al dente. Remember to keep 1 cup of the pasta water aside! 🙂
  7. Add the al dente pasta to the bolognese sauce as well as the pasta water and mix well. Allow to stand for atleast 10-15mins as this will allow the pasta to soak up all the sauce.
  8. Add salt and pepper to taste and serve with a generous sprinkle of parmesan cheese. Voila!
