Pancakes with homemade Berry Compote and Peanut Butter

Easy to make pancakes that you can use for various savoury and sweet dishes, I think that’s why I love them so much! I opted for the fluffy light texture of the pancake, with the deep nuttiness of the peanut butter and the refreshing tart sweetness of my homemade berry compote

  • 2 large eggs
  • 3/4 cup milk
  • 1/2 cup water
  • 1 cup flour
  • 3 tablespoons melted butter
  • 1/2 tsp baking powder
  • Butter, for coating the pan


  1. Add all the dry ingredients into one bowl and all the wet ingredients to another and mix each thoroughly.
  2. Heat a small non-stick pan. Add butter to coat. Pour 30g of batter into the center of the pan and swirl to spread evenly.
  3. Cook for 30 seconds and flip. Cook for another 10 seconds and remove it to the cutting board. Lay them out flat so they can cool. Continue until all batter is gone.
  4. After they have cooled you can stack them and store in sealable plastic bags in the refrigerator for several days or in the freezer for up to two months. When using frozen crepes, thaw on a rack before gently peeling apart. So eeeeasy!
