A fresh, bright green sauce that adds beautiful flavour and colour to any dish! I love using this with chicken schnitzel, veggie bowls, platters, pasta (yes, pasta!), salads and so much more.

This sauce takes about 5 minutes to make if you don’t add the roasted garlic but I would highly recommend you do. I just cut 1/4 of one garlic head off, drizzle over some olive oil, wrap it in foil and air fry for 20 mins at 200 degrees celsius.

Only add juice from one lemon before adding more as this depends on your personal preference.

Simple Green Sauce

Servings: 2 cups

Ingredients

  • 1 avocado
  • 2 medium jalapenos deseeded
  • 1 ½ cups cilantro or basil
  • ½ cup water
  • ½ cup olive oil
  • Juice from 1-2 lemons
  • 1 head of garlic roasted *optional*
  • 2 cloves raw
  • ½ cup almond flakes toasted
  • Good pinch of salt
  • Drizzle with chilli oil

Instructions

  • Add all your ingredients to a regular or stick blender.
  • Blend until smooth or slightly grainy - if you'd prefer a little bit more texture.
  • Salt to taste and enjoy!
