They take a bit longer than your normal loaded potatoes seeing we’re on the hunt for that extra crisp – well worth it gang! Feel free to add whatever topping you’d like, these could be fully vegan so yes, versatility is at hand. So give’em try.

Ingredients
- 4 large potatoes
- ½ cup 2 tbsp olive oil separated
- 500 g minced beef
- 1 tbsp garlic finely chopped
- 1 ½ tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp onion powder
- 2 tsp crushed chilies optional
- 400 g tomato puree
- 200 ml water
- 2 tsp sugar
- 1 tbsp red wine vinegar
- Salt to taste
- 2 med tomatoes diced
- 1 med onion diced
- 2 limes
- 1 cup sour cream
- ½ cup spring onion diced
Instructions
- Firstly, preheat your oven to 220 degrees celsius. Bring warm water to a rolling boil and add the potatoes. Boil for about 25min or until tender.
- Prepare a baking tray big enough for all the flattened potatoes. Pour 1/4 cup olive oil onto the tray and spread it evenly. Add your potatoes and flatten them using a clean pot or plate - whatever works for you. Drizzle the remainder of the 1/2 of olive oil over the smashed potatoes and generously sprinkle with salt. Bake for 40mins, then flip and bake for the remaining 15min or unto your preference (depending on your oven strength and accuracy).
- For the Sauce: add the 2tbsp olive oil, garlic, cumin, smoked paprika, onion powder, and chilies together and saute for 1min on med-high heat. Add the mince and saute for another 2mins. Add the tomato puree, water, sugar, salt, and vinegar and simmer on medium heat for about 20mins or until most of the liquid has evaporated. Salt to taste and set aside.
- For the salsa: add the chopped tomato, onion, and juice from half a lime to a medium bowl, mix and set aside.
- Once the smashed potatoes are crispy and ready, you'll add a layer of sauce and grated cheese. Grill them in the oven until the cheese is bubbling. Remove them from the oven, and add your salsa, sour cream, spring onion, and remaining lime wedges.
