The TASTIEST Beef Stir-Fry | 30-Minute Meals

This is a deliciously simple and tasty Beef Stir-Fry meal that’ll only take you 30-minutes to throw together. So save this one because you’ll make it once and then again, and again, and again. I love switching up the proteins and vegetables depending on what I have on hand and what’s in season. I then also serve it with sushi rice, basmati rice, noodles, mash etc.

I like using beef fillet (especially after payday) but you can happily use less expensive cuts as we’ll be be “velveting” the beef. This is an effective way of tenderizing cuts of meat such as beef, chicken, turkey and pork but you can also use seafood like scallops and shrimp to keep them from overcooking.

You’ll be preparing 4 elements; the beef (or protein of choice); the marinade; the veggies; the rice (or noodles etc.). Washing the rice and letting it boil and steam while you’re preparing the the other elements means you’ll have dinner ready in 30-minutes, easy. It’s the best!

time:

The beef will be sliced thinly and cooked on a high heat so it’ll cook no more than 3-5 minutes. The veggies will also be cooked on a high heat to get some colour and slightly soften but still have a bite to them. This’ll also take about 3-5 minutes. The rice will take about 20 minutes in total and noodles even less.

Beef

Above: Velveting is a cooking method where usually tough cuts of meat are marinated in a cornstarch or baking soda mixture or slurry. This tenderizes the meat without altering its taste while also helping the meat to retain moisture so it doesn’t dry out while cooking, especially in something like a stir-fry.

Green salad

Above: I used a medley of white onion, spring onion, green peppers and kale. I love how the kale softens but still adds texture, the large chunks of green pepper still a tad firm, the white onion softens and become sweet and the spring onions also softens but delivers that “fresh” onion flavour.

A simple but seriously tasty beef stir fry that' packed with protein, fiber and flavour. It's one of my best 30 minutes meals. You can use whatever proteins or veggies you like but trust me when I say this is crazy good!

Ingredients

Beef Marinade

  • 250 grams beef fillet thinly sliced
  • 1 tbsp oil canola or olive oil
  • ½ tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp rice vinegar
  • ½ tbsp sesame oil
  • 1 tbsp honey
  • 2 tbsp oyster sauce
  • tsp salt
  • 1 tbsp cornstarch
  • 1 tbsp water
  • ½ tsp baking soda

Stir-Fry

  • 2 tbsp oil
  • 1 large white onion cut into thick slices
  • 1 large green pepper cored and cut into bite size chunks
  • 3 large spring onion stalks cut lengthwise and into large chunks
  • 2 stalks kale stems removed and roughly diced
  • 1 tbsp sesame seeds toasted, for garnishing

Sushi Sticky Rice

  • 1 cup short grain rice
  • 1 ½ cup water

Instructions

  • Wash the rice until the water runs clear. Add water to the rice and bring to a boil. Once boiling, cover and lower the heat to a low heat. Cook until the rice has soaked up all the water. Keep covered and remove from the heat. Allow the rice to steam until the beef stir fry is ready.
  • Meanwhile, slice the beef into thin pieces and add to a medium bowl. Add oil, soy sauce, dark soy sauce, rice vinegar, sesame oil, honey, oyster sauce, salt, water, cornstarch, and baking soda. Mix and allow to marinade while you cut the vegetables.
  • Remove the core from the green pepper and cut into large chunks. Remove the onions top and bottom and cut into wedges. Remove the roots of the spring onion and slice lengtheise and then in 5 cm pieces. Keep the white and greener part of the spring onion separate and you'll only be adding the greener (top part) towards the end.
  • Bring a large non-stick saucepan or wok to a medium-high heat. Add 1 tbsp oil and the marinaded beef with all its sauce. Fry for 3-5 minutes or until the beef starts to caramelize. Remove the beef from the pan and set aside.
  • In the same pan, on a medium-high heat, add 2 tbsp oil and kale, green pepper, onion and the white parts of the spring onion. Sauté for 3-5 minutes or until the vegetables start to charr but still have a bite to them.
  • Add the beef and remaining spring onion to the vegetables and sauté for 30 seconds. Remove from the heat.
  • Serve the beef stir fry on a bed of rice and top with toasted sesame. Enjoy, tastebud!
