Date Night Gnocchi Pasta Easy Beginners tasty

Date night dinners should be all about good food that’s utterly delicious and takes minimal effort so you have more time bonding with your better half. Also, don’t skimp on the candles, the wine and the music, capiche? I’d say this dish did the trick… it’s perfect for the beginner cook and will make kitchen activities extra fun – cooking together is where it’s at!

For this recipe, I used La Molisana’s premade gnocchi (bought mine at my local Food Lovers Market), and honestly, it’s so light and fluffy – I was pleasantly surprised the first time I cooked with it. Also, 2-4 servings means it could be a starter for 4 or a main course for 2 persons – enjoy!

20min Tomato Gnocchi

  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tbsp fresh thyme, stalks removed</l
  • 3 cloves of garlic, thinly sliced
  • 1 tbsp tomato paste
  • 300g cherry tomatoes, cut in half
  • 1 1/2 tsp brown sugar
  • 1/2 cup white wine
  • 250g gnocchi
  • 2 tsp salt
  • 1/4 cup of grated parmesan</l


  1. Add the olive oil, butter, and thyme to a medium saucepan and bring to med-high heat. Cook for 1 minute.
  2. Add the garlic and tomato paste to the saucepan. Cook for 1 minute.
  3. Add the cherry tomatoes, brown sugar, and white wine to the saucepan. Simmer until the liquid has reduced by half. Set aside until the gnocchi is ready.
  4. Bring water to a boil in a large saucepan. Add 2tsp of the salt to the water once it has started to boil and add the gnocchi as well. Boil until the gnocchi starts to float to the top and drain. Remember to keep at least a cup of the pasta water aside.
  5. Add the drained gnocchi and 1/2 cup of pasta water to the tomato mixture. Mix until well incorporated. The pasta water should’ve added sufficient salt to the pasta but always take a bite and double-check. Add more salt if needed.
  6. Set the pasta aside and prepare to dish up. Enjoy!
