Hot Cross Bun Breakfast Bake

Celebrating Easter is such a special time spent with family, good food, and the overall feeling of gratitude. Whether you celebrate this religious holiday or not I can encourage you to try this recipe. It’s the ultimate, sweet, and savoury combination.

Feel free to replace the gypsy ham with bacon, chicken and beef, etc., or skip the meat altogether – super versatile!

Ingredients

  • 6 hot cross buns
  • 200 g gypsy ham
  • 200 g cheddar cheese grated
  • 2-4 eggs
  • 1 cup milk
  • 1 tsp salt
  • Finish off with Honey or Maple syrup drizzle

Instructions

  • Preheat your oven to 200 degrees celsius
  • Cut the hot cross buns into 3cm cubes and gypsy ham into cubes and add to a large bowl.
  • Grate the cheddar cheese and add that to the large bowl as well.
  • In a separate bowl, add the 2 eggs, milk and salt whisk well. You may add two additional eggs if you'd like the bake to have more eggs - this all depends on personal preference (I like both versions).
  • Pour the whisked wet ingredients over the hot cross buns and toss into your baking dish. Bake for around 45mins or until beautifully crispy on top and not too soggy. I'd start checking around 35mins seeing all oven are different. Once removed from the oven allow the bake to rest for 15mins.
  • Drizzle over some honey or maple syrup before serving. Enjoy!
