Orzo with Roast Vegetables, Bacon, Feta and Basil Pesto

Orzo Pasta with bacon roast vegetables avocado feta basil pesto

It’s a lovely dish to make as it can be served warm or slightly chilled depending on the season. This dish can be served as a base for any protein of your choice. I ‘ve served it with pan-seared salmon, steamed line fish or grilled chicken. If you are someone who like to meal prep then this will be a great option as well.

Orzo is something you must try, it has quite a silky, luscious mouthfeel. It’s important that you don’t overcook the orzo, just like all pasta, you want it to be al dente.

Make sure your veggies are all properly washed, especially the leeks! If you have leftover roast vegetables then this recipe should be your go-to, so remember that for next time!

Serving this with some fresh lemon wedges and chopped coriander or basil or even parsley. Hope you guys enjoy this one!
