If comfort food and cheeseburgers had a deliciously lazy love child, this Cheesy Beef Toastie would be it. Crispy golden bread, gooey melted cheese, savoury beef mince, sweet caramelized onions and a tangy burger-style sauce all come together in one gloriously messy sandwich situation. It’s the kind of meal that feels indulgent without requiring hours in the kitchen — exactly the sort of recipe that earns a permanent spot in the weekly dinner rotation.
The magic starts with the sauce. Inspired by classic burger flavours, it’s a creamy, tangy combination of mayo, tomato sauce, yellow mustard and diced gherkins or pickles. This Cheesy Beef Toastie brings that unmistakable cheeseburger taste to every bite and pairs perfectly with the rich beef filling. Then comes the cheese — and not the fancy kind. Processed cheese slices are the real hero here because they melt quickly, evenly and deliver that irresistible stretchy cheese pull every single time. No dry toasties allowed.
Layered over the sauce is savoury beef mince, cooked until rich and flavourful, followed by soft caramelized onions for a touch of sweetness. Naturally, there’s more cheese involved, because restraint simply doesn’t belong in a recipe like this. Everything gets sandwiched between slices of bread and toasted until perfectly golden and crunchy on the outside while staying molten and cheesy in the middle.
This is the ultimate low-effort, high-reward comfort meal. Serve this cheesy beef toastie on it’s own for a quick lunch, or pair the perfect Cheesy Beef Toastie with a fresh green salad or crispy fries and dinner is sorted. Easy, cheesy and dangerously addictive — exactly how a good toastie should be.

Instructions
- Bring a large frying pan to a medium-high heat. Once heated, add sliced onions, oil, and water. Mix lightly and cover. Allow to steam for 10 minutes. Note: adding water helps speedup the caramelizing process.
- Remove the lid and continue frying until the onions become golden brown and caramlized. Set aside. Note: add additional oil if needed.
- Meanwhile, bring a large frying pan to a medium-high heat and add olive oil and beef mince. Fry until most of moisture has escaped and the mince starts to brown.

- In a small bowl, add mayonnaise, tomato sauce, yellow mustard, dice gherkins and mix until combined.
- Take two slices of bread and layer each one with some of the burger sauce, top with 2-3 slices of processed cheese, savoury mince, caramelized onions. To the remaining two slices, add more sauce and cheese each slice and place that on top of the loaded slices.
- Bring a large frying pan to a medium-low heat, add a dash of oil and butter, once melted place the 2 loaded toasties in the pan, ensuring they get and equal amount of butter and oil. Toast on each side for 2 minutes.
- Once toasted on both sides, remove from the heat, cut in half and serve immediately.
