Creamy mince pasta. It’s rich, it’s meaty, it’s unapologetically comforting—and best of all, it doesn’t demand much from you. No complicated steps, no fancy techniques, no obscure ingredients hiding at the back of specialty stores. Just straightforward cooking that delivers big flavor in about 30 minutes.

The magic here is in the balance. You’ve got savory, browned mince bringing that deep, hearty flavor. Then comes the creamy element from the starchy pasta, cream and parmesan cheese —smooth, luscious, and just indulgent enough to feel like a treat without tipping into “too much.” Add a punch of seasoning, a bit of garlic goodness, and suddenly this simple dish tastes like you put in way more effort than you actually did.

It’s also the kind of recipe that doesn’t judge. Forgot to defrost something fancy? This has your back. Too tired to follow a complicated recipe? You’re still covered. It’s weeknight cooking at its most reliable—quick, flexible, and genuinely delicious.

And let’s not ignore the obvious win: pasta. Always a good idea. Pair it with a creamy, meaty sauce and you’ve got a bowl of food that’s hard to stop eating once you start. Leftovers (if there are any) are just as good the next day, which makes this recipe even more of a keeper.

So if you’re after a no-fuss, flavor-packed dinner that feels comforting without being boring, this creamy mince pasta is ready to step in. Minimal effort, maximum reward—that’s the deal.

Servings: 4

Ingredients

  • 2 tbsp olive oil
  • 1 tbsp butter
  • 500 grams beef mince
  • 1 medium white onion diced
  • 3 cloves garlic finely sliced or chopped
  • 1 tsp dried thyme
  • 1 tsp fine sea salt or salt to taste
  • ¼ tsp ground white pepper or black pepper
  • 4 cups chicken stock warm, see note 1
  • 1 cup cream
  • 1 cup parmesan cheese grated
  • 350 grams pasta of choice

Instructions

  • Bring a large frying pan to a medium high heat. Add olive oil and butter, once melted, add the mince. Saute until the excess liquid has evaporated, and the mince starts to crisp up - it'll turn from gray to a deliciously brown colour.
  • Add the onion, garlic, dried thyme, salt and pepper. Continue sautéing for another 3 minutes or until the garlic starts to brown.
  • Add the dried pasta and warm chicken stock. Stir and cover, cook for 8 minutes, undisturbed.
  • Turn off the heat, add the cream and grated parmesan cheese, stir and allow to rest for 10 minutes.
  • Salt to taste then dish up and garnish with more grated parmesan cheese if you like.

Notes

Notes:
1. Chicken Stock: some liquid chicken stocks are saltier than others so just keep an eye on how much salt you decide to add to the overall recipe. Also, some chicken stocks aren't as flavour some as others so feel free to add a teaspoon or two of chicken stock powder to up the flavour if you wish.
