Creamy Mince Pasta

A deliciously meaty, creamy pasta that's a go-to for the family! It's perfect for when you're feeling a tad lazy and you have on 30 minutes to throw something together.

Ingredients

  • 2 tbsp olive oil
  • 1 tbsp butter
  • 500 grams beef mince
  • 1 medium white onion diced
  • 3 cloves garlic finely sliced or chopped
  • 1 tsp dried thyme
  • 1 tsp fine sea salt or salt to taste
  • ¼ tsp ground white pepper or black pepper
  • 4 cups chicken stock warm, see note 1
  • 1 cup cream
  • 1 cup parmesan cheese grated
  • 350 grams pasta of choice

Instructions

  • Bring a large frying pan to a medium high heat. Add olive oil and butter, once melted, add the mince. Saute until the excess liquid has evaporated, and the mince starts to crisp up - it'll turn from gray to a deliciously brown colour.
  • Add the onion, garlic, dried thyme, salt and pepper. Continue sautéing for another 3 minutes or until the garlic starts to brown.
  • Add the dried pasta and warm chicken stock. Stir and cover, cook for 8 minutes, undisturbed.
  • Turn off the heat, add the cream and grated parmesan cheese, stir and allow to rest for 10 minutes.
  • Salt to taste then dish up and garnish with more grated parmesan cheese if you like.

Notes

Notes:
1. Chicken Stock: some liquid chicken stocks are saltier than others so just keep an eye on how much salt you decide to add to the overall recipe. Also, some chicken stocks aren't as flavour some as others so feel free to add a teaspoon or two of chicken stock powder to up the flavour if you wish.
